1/3 cup (75 mL) all-purpose flour
1 tsp (5 mL) baking powder
1 tsp (5 mL) salt
1/2 tsp (2 mL) pepper
1/4 tsp (1 mL) nutmeg
2 eggs
1 cup (250 mL) milk
1 tbsp (15 mL) butter, melted
2 cups (500 mL) shredded cheddar cheese
1 package (300 g frozen) chopped spinach, thawed
1/4 cup (50 mL) finely chopped sweet red pepper
1 green onion, chopped


In large bowl, stir together flour, baking powder, salt, pepper and nutmeg.

In separate bowl, whisk eggs; whisk in milk and butter. Stir in cheese, spinach, red pepper and onion. Pour over flour mixture; stir just until combined. Pour into greased 11 – x 7-inch (2 L) baking dish. Bake in 350°F (180°C) oven for about 30 minutes or until set. Let cool for 10 minutes; slice into squares.
