Hina’s World: Recipe: Creamy Cheesy Baked Spaghetti Surprise

IMG_0785
I saw these recipes listed in my Pinterest feed, yet I used my own version. ¬†Upon my own excitement in trying this, I forgot to follow it step by step, and just improvised it into my own mix. ¬† ¬† ¬† ¬† It was a HUGE hit in my house, and as my kids tried to figure out where this creamy base was from; it was finally revealed as “cream cheese” and cheese on top, and they loved it.
I did remind them of lasagna, and liked this method of way to eat their spaghetti.

Ingredients:

1 pkg spaghetti, (cooked according to the package, drained and strained and set aside).
1 jar of tomato sauce
1 cup of water
1/2 cup sour cream
8oz cream cheese softened
1 pkg shredded cheese
2 Tbsp olive oil
optional: 1lb of ground beef, cooked- until it remins no longer pink, but lightly browned.   add a chopped onion, some garlic and ginger, and seasonings to taste.
optional: 1 cup of cottage or ricotta cheese or skip altogether
2 Tbsp butter melted (plus on bottom of baking dish, grease lightly with butter.
Seasonings; sea salt, or pink salt, black pepper, italian seasonings and herbs

Preparation:

1. ¬† Preheat oven to 450’F.

2. In a large bowl add cream cheese, sour cream, and ricotta/or cottage cheese, and 1/2 cup of water.    blend until smooth.  Set aside.

3.   Boil spaghetti as per package, until tender, and drain, and rinse in cold water and set aside.

4.   In a large fry pan cook ground beef until it no longer remains pink, and lightly brown.  You can add a chopped onion, some spices into this, and some water, and lightly oil til it is cooked all the way through.

5.  In a bowl, combine the cooked ground beef, and tomato sauce, and 1/2 cup of water.     If you are skipping out the beef altogether, you can just mix these together as is, and leave it aside.

6.  In a large baking dish, grease/butter it lightly on the bottom to prevent the noodles from sticking.

7.   Add spaghetti, on top add cream cheese mixture, and then meat or tomato sauce mixure.    Keep repeating layers across the pan thinly until completed.  Sprinkle seasonings and herbs on tp.

8. ¬† Bake on 450’F or 30 mins, uncovered then add the shredded cheese, and bake for another 10 minutes or until cheese is lightly melted and lightly browned.

9.  Remove from oven and serve into wedges or slices.    Enjoy!

This is AMAZING, goes really well with the Fruit Salad I made along side with it to accompany it.

The recipe for the fruit salad is simple;

1 chopped tomato, handful of chopped celery and carrots, with 1 chopped apple.
that’s it. ¬† very simple and easy. ¬†You can add whatever you want to the salad, black pepper, balsamic vinegar, lemon juice, sumac, olive oil or just on its own.

Let me share with you the story behind this, or how this came to be for tonight’s dinner;

The ground beef was made earlier yesterday, and usually i’ll throw it together in an enchiladas or tortillas wrapped up with this and cheese, quesadillas or some style like that in parathas. ¬† ¬† However, my kids wanted dinner, and I had to go to my workout class. ¬†With about 45 minutes to spare, I quickly did a scan of what we had ingredients, and what I could whip up really quickly that something that they would love to eat, and would come back for seconds.

I’m not sure what inspired me, or pushed me but the shepherd’s pie recipe just spoke to me, DO THIS ONE! ¬†And I looked to see if we had the ingredients, we did. ¬†I got excited as I took out the casserole dish, and took the frozen veggies out, and threw it into a large microwavable bowl, then added some water and zapped it for about 5 minutes, yes just 5 minutes.
Then I added it to the pan, with the ingredients above and as that was cooking.

Then, I looked and saw the ground beef and heated that up for about 3 minutes to loosen it up from the refrigerator, and then mixed it with tomato sauce, and the water til it was saucy.
I spread it across the bottom of the casserole dish., then added the veggies and other layers on top.

As the meal was cooking, I kept looking at the time and hoping that I would make it to the class on time.    And as time as it would, I just had a few mins to spare as the meal was broiling and cheese was melting and I kept zipping back and forth to quickly set the table, and letting the kids know I was heading out to my workout class, and checking to see where my daughter was, in the front riding bikes with her friends.

It was funny, as I pulled it out of the oven, set it down, and yes I tried a bite to see how it was, before I called the kids down to say it was ready.
It was amazing! ¬†but I saw I only had 2 minutes to spare before the class would actually start and grabbed my cup as I filled it with water and ice and then grabbed my shoes on and headed out the door. ¬† ūüôā

I came home after my workout and saw that the kids had already ate, as their plates were scraped clean and laid near the dishwasher/sink.   and saw a quarter of the casserole dish was already gone.   My daughter and I grabbed our plates and gave it a quick re-heat and started eating.

Let’s just say it was a HUGE Hit, as she loved it and happily took 2nd’s as so did I. ¬†I know! ¬†I know! ¬†But OMG! ¬†It was just fantastic! ¬†You just had to be there and see how good it smelled. ¬† ¬† and the salad was amazing too, great compliment to go along with this. ¬† My dad had came home and also loved it.

I told the kids this would be their lunch tomorrow for school, and they happily agreed with me.     I know if you guys try making this for yourself you too will have amazing results, and a great hit with your kids.

Let me know, if you tried making a version of this, and if it is similar to how I made mine?

Hina’s World: Recipe: Beef Haleem

Beef_Haleem

https://ibyisaliamom.wordpress.com/2014/12/20/haleem/

https://ibyisaliamom.wordpress.com/2009/06/08/recipe-vegchicken-haleem-from-scratch/

This one I used a quick and easy version from the shan package, but I ended up adding my own spices to it, Himalayan pink salt and red chili powder and lemon juice, then at the end as I was waiting for the soup to thicken in my slow cooker, then more water to thin it out so it’s not as thick. ¬† ¬†And kept stirring it. ¬†It took probably 45 minutes to make, as before that I was ¬†baking the beef meatballs then added it to the pot with everything else, and then blended it with a hand blender. ¬† ¬† ¬† ¬†In the end you can ¬† ¬† Yes you can usually add yogurt to this, but I wanted a quick version of this and this was it. ¬† ¬† decorate it with chopped cilantro and more fried onions. ¬† ¬† ¬† ¬†I must admit I had 2 bowls of this, and I know my kids also did as well. ¬† ¬† My mom just walked in and also had 2 bowls of this. ¬† ¬† ¬†She recommended I should add yogurt to it which I usually do, but it can also go without too.

What are the versions you had?
