Hina’s World: CousCous Kale Squash Salad

I saw this recipe in another recipe online, yet it was asking for 1 cup of brown sugar to the squash.  I thought that was way too sweet, and way too much sugar, so knowing me, and how I work, I experimented, and decided it would be worth it and see and substitute, and add the protein tri-sorb proprietary blend vi shake mix instead, and guess what?  it turned out beautifully, not to mention delicious!    Yeah, it had a sweet taste to it, and it’s a different kind of salad, but wow, oh wow! it was really good and another way to have this shake, with another recipe as people tell me, “I can’t have shakes all the time!  It’s exhausting.”   Well, I’m here to tell you, you can drink the shakes, or eat it, either way, it’s all protein, nutrition and all good for you.  Try this and trust me, it’s so good!      Hope you guys enjoy it!

CouscousKale_Squash_Salad

Takes 30 minutes to prepare (cooking and preparing)
Serves 6-12 people  (use less if it’s just you alone)

Ingredients:
1 cup couscous (boil as per package/set aside)
1-2 cups kale (cut them into strips, steam or bake them ahead)
1/2 green pepper diced
1/2 orange bell pepper diced
1/2 yellow bell pepper diced
1/2 red bell pepper diced
1 tomato diced
1/2 bunch fresh cilantro and parsley chopped
1/2 of a lemon juice
1 tsp sea salt or pink salt (your choice)
1/2 tsp black pepper
2-4 Tbsp olive oil

1 package of butternut squash or fresh diced
2 Tbsp melted butter
2 Tbsp brown sugar
2 scoops vi shake mix (or any protein mix)
1 tsp spinach herb seasonings
1 tsp mrs dash garlic and herb seasonings
1 cup vegetable broth

Preparation:

1.   In a large bowl, add the already cooked couscous, then add the bell peppers, tomatoes, cilantro, parsley, kale, and mixing it altogether.

2.   Meanwhile, in a large skillet, add veg broth, and add the diced squash, along with the melted butter, brown sugar, protein shake mix, and seasonings.      Cook on medium-low heat for 15 minutes until it becomes soft, and you can smell the caramelizing and flavors have blended in.

3.  Add it to the couscous, and mix it, adding the rest of the seasonings and olive oil.

4.  Serve and enjoy!

Hina’s World: Mashed Butternut Squash with Fiesta Nut Vi-Bites & Walnuts

Very simple easy recipe to make.

Take a butternut squash, place it in the oven on a baking sheet on 450’F for about 45 minutes.    Remove, and cut into slices, and remove the skin around it.         Place it back in the oven for another 15-20 minutes.    Remove and in a bowl, mash it up, add 1/2 cup of almond milk, 1 Tbsp brown sugar, 2 scoops of vi shake mix or any protein mix you prefer.   Mash it up.
Then add the Vi Bites – Fiesta Nut on top, and walnuts; and serve.   You can add other things, whatever you like.     This was very tasty, and another way to have the shakes.

Vi Muffins

Vi_Muffins_DeliciousThere’s this story behind this, very interesting story!      Last week I saw the recipe for Vi-Donuts and as I checked out the ingredients, the vi- shake mix in it specifically I was impressed and totally prepped for making this soon.     I made sure we had all the ingredients even down to the mixed frozen berries that I would throw in.     And as the days went by, I kept saying not today, tomorrow.  Well, that day came this afternoon as I decided no time wasting and started preparing.

It was until I got to all the ingredients I realized 2 things.   1) No more frozen berries, that was used up this morning for my mixed berries shake.  2) no donut pan to make these in.  So I settled for a cupcake cake pop pan, and a muffin pan which still worked out really good as you can see above.

The ingredients are as follows;
Ingredients:

For the donuts:

1/2 cup flour (you can increase it to 1 cup for more donuts)
1/2 cup Vi Shape Meal Replacement shake mix
1/3 cup white sugar (I ended up substituting 1 Tbsp of brown sugar, 1 Tbsp of white sugar, and 2 scoops of vi shake mix.   Yes more shake mix, I felt the sugar it was asking was still too much for me.
1 tsp baking powder
1/8 tsp cinnamon powder
1/4 tsp salt (I used Himalayan pink salt)
1/3 cup buttermilk ( I ended up using almond milk with the 1/2 tsp white vinegar)
1 egg beaten
1 tsp vanilla
1 1/2 tsp oil (I used Olive)
1/2 cup of fresh berries (I didn’t use any of this)
But for all the ingredients above, I increased it to get more batter and more donuts.   Especially for these hungry kids here all eagerly awaiting for it.  Which reminds me, after I finish typing this, I should let them know it’s ready as they are playing outside in this beautiful weather.    However I’ll let them continue playing while I finish this up and soak in how quiet it is.

For the frosting:
1/2 cup milk chocolate chips ( I used Velata’s milk chocolate meltables)
2 tsp low fat milk (I used 1 tbsp. veg shortening)
Preparation:
1. In a large bowl, whisk together the following; flour, shake mix, sugar, baking powder, cinnamon, and salt.
2.  In a small bowl, stir together the buttermilk, egg, vanilla, and oil.   Add the wet ingredients to the dry and stir with a wooden spoon until fully blended and mixed in.  I used a whisk all the way through.
3.  Here I was suppose to add the berries and stir, but I didn’t  have it so I continued stirring with the whisk to make sure even the bottom didn’t have any flour remaining.
4.   I preheated the oven ahead of time to 350F- then greased the pan, and added the batter in by spoonful     I baked it for 10-15 minutes until it was a light brown color and all the way cooked.
5.  Removed from oven and cool in the pan, then transferred to a serving platter.
6.   This is where I melted the chocolate chips with the milk in a microwave for 25 seconds, mixed it again and then microwaved it for another 25 seconds.      At this point it was melted, and the donuts  were cool.   I just drizzled the chocolate over it, and served it.

As it sits there, I tried a couple and it was sure good, very delicious.       I see my kids playing outside with their friends and think should I call them inside?  Or should I let them remain out there until it’s time for them to come inside?    Hmmmmm.   I’ll stay here and type this, and let them stay outside until it’s time for them to come inside.        Enjoy!

Project 10 Challenge Day 88/90

The Body by Vi Challenge.

123lbs ooooh great, now is that muscles or is that fat? I’m seriously trying to see if there are any changes in my body, now there has to be some changes cuz my size small pants wont stay put or on, and keeps slipping and im up pulling them up every few mins hiking them up like u know and ppl r like are you ok? Yeah i’m fine, pants just wont stay put cuz vi-‘s working! oooh yeah! project 10 challenge is working! ooh yeah! but is that muscles im gaining here, or is that fat? so im wondering, waiting. thinking ok. who is going to read this journal of mine anyways?
so here it is; 124.6 with clothes on, no clothes and all i weigh myself in 123 ok so 1 pound less for that.hmm ok. check
then 52.0% water. is that a good thing or a bad thing? I know last week I was at 55% water now it’s 52, ok i’m lacking in water intake. must have been the cold the last few days. check
28.7% BF, is that a good thing or bad i dont know. but I still feel the love handles on my tummy, muffin top. and don’t know if that’s muscles or fat.
feeling it, and feels big. ok. but
I can feel muscles in my arms, and shoulders, can feel the tightness in my thigh areas. yay check.
7905 steps today oooh yeah i need to do some more walking and less talking 😀
3.4 miles oooh yes lots of running around the block, errands, and all. check
2119 calories burned. oooh that’s intensive, and only 900 calories was that of the intensive FuZion workout class I usually go to weekly or now twice a week. and the rest of it was through other work in the house, carrying heavy boxes from one room to another and here and there. 🙂 this is good.

my 9th 90 day challenge ends in 2 days. 😦 ooh boo!
but
I will start a NEW one immediately, no day to rest, and usually go to celebrate so hmm. thinking. my kids said they wanted chinese, so i guess that’s my cheat moment. then back to starting it up to pack in 10lbs of lean muscles, and trade that 10lbs or 20lbs of fat for muscles. that way i can really help 1-2-3 kids maybe also get healthy too!
continue health improvement, continue on where i am going. yes. all mindset. ok. that’s all for now.
